I have always read that barley takes A LOT of water to cook in, so I’ve dutifully used the recommended ratio. However, it always came out mushy and soggy.
Below the the best ratio and time for fully cooked barley that is not mushy. I prefer my food well cooked, and my partner prefers it al’dente. This satisfies us both.
Instant Pot Barley
- 2 cups water
- 1 cup barley
- Cook on high pressure for 20 minutes
Runner Up
For those that are really looking for a softer kernel, try this ratio.
- 2.25 cups water
- 1 cup barley
- Cook on high pressure for 22 minutes
Instant Pot Barley with a twist
Make things interesting tonight by using broth instead of water. This gives the barley some extra depth and taste. Feel free to experiment with other herbs such as garlic and parlsey.
- 2 cups low sodium chicken or vegetable broth
- 1 cup barley
- Cook on high pressure for 20 minutes
